What is the one thing you would want to do on a beautiful summer afternoon? How about a picnic?
Check.
Of course, as soon as we leave to go sit by the lake and have a picnic, it begins to rain for the next hour and a half.
Oh well, at least the meal was delicious.
I had a craving for chicken salad and it seemed like the perfect opportunity to use up the extra grilled chicken left in the fridge. It was also a great way to use the tomatoes we had from our green thumbed neighbor.
This meal is a great way to impress your friends and family. Especially if they are on a low carb diet. Still, they are delicious for everyone else.

I've been eating allot of chicken salad this summer. I normally do a lettuce wrap with it. I like the idea of the tomato!
ReplyDeleteThanks! It was delicious! I bet it would be great in a lettuce wrap too.
